Veggie-Palooza for Meatless Mondays!
This Monday, skip the meat and boost your veggie intake in honor of Meatless Mondays, a healthy campaign to promote eating more fruits and veggies. What we found out in pulling together this collection of meatless recipes, is that vegetables don’t have to be boring – in fact they can be mouth-watering, lip-smacking additions to your weekly menus!
Enter the Meatless Entrée
We would have turned up our noses at just any bean burger, but this Red Beans and Rice Burger from Southern Living looks like something we’d excitedly order off a menu! Full of Creole seasoning and vegetables, topped with Creole mustard, and served on toasted bread, these filling burgers offer the same savory flavors that all Cajun food brings. If you allow yourself seafood, you can even top these burgers off with grilled shrimp and add a little more potassium to your meal.
This Tofu and Mushroom Stir-fry from Bon Appetit is another tantalizing vegetarian dish with plenty of mushrooms – maitake, shiitake, oyster, button or crimini, and rice wine, rice vinegar, ginger and soy sauce. The editor-chefs recommend pressing the whole block of tofu between paper towels weighted down with large cans for 15 minutes to squeeze out the excess water. The result will be extra crispy (and tasty) tofu as it cooks.
Bon Appetit modestly calls this the Best Eggplant Parmesan recipe and with a boatload of five-star ratings we’re not going to challenge their claim. Alex Lau’s photo will make you a believer and while it’s not your easy-peasy five-minute-prep kind of recipe, the pay-off is a yummy combination of veggies sure to make you smack your lips and make you look forward to another meatless Monday!
Bowl ‘em Over
These two dishes from Kitchn might become part of your regular weekday meals. The Wild Rice and Red Lentil Curry has spinach in the lentil porridge and is topped with sour cream and cilantro. If we had a spoon we’d try dipping into Karen Biton-Cohen’s snap of her veggie bowl – it looks THAT good.
The Cheesy Polenta Bowl with oven-roasted tomatoes and Zucchini, not to mention a few shallots and broccoli florets, is topped with a lemon zesty pesto sauce that can’t be beat. Truly a dish you’ll come back to after meatless Monday!
You Say Potato…
And because we never met a potato we didn’t like we’re including two more. This Delish recipe for Cheesy-Garlic-Buttery Potatoes offers at least three more things to like about this starchy edible spud dish with two kinds of cheese. They take 15 minutes to prep and an hour to bake, during which you’ll be anticipating every mouthful.
Christin, the blogger for Spicy Southern Kitchen, came up with this recipe for Roasted Sweet Potatoes, a healthy side dish packed full of flavor from chili powder, paprika, cayenne, onion, pepper and brown sugar. What we like about it is both the spicy sweet flavors and the roasted crispiness.
