Easter Egg Hunt!
Start your Easter weekend on Saturday with the Crystal Valley Easter Egg Hunt at the Pinnacle, 2160 Fox Haven Dr. in Castle Rock. At 10:30 a.m., wee egg hunters will meet in the parking lot to look for hidden confections, then head inside for snacks, crafts, and selfies with the Easter Bunny who’ll be hippity-hopping around the Great Room!
Sunrise Service
On Sunday, join other early birds at 6:30 a.m. for a sunrise Easter service at the Philip S. Miller Amphitheater in Castle Rock, sponsored by several local churches. Head to the park at 1375 W. Plum Creek Parkway to commemorate the resurrection of Jesus Christ, with singing and worshipping, pastries and beverages.

Even if you partake of a pastry at the sunrise service, you’ll still want a warm and satisfying Easter meal, right? To keep the day going in perfect accord, here are a few eggceptional brunch dishes and sweet treats.
This Ham, Cheese and Asparagus Strata from Better Homes and Gardens is piled high with protein, French bread cubes, asparagus and melted Gruyere cheese, and can be assembled the night before!
Whether you have a mandolin or not (the food slicer, not the instrument), you can still shave to impress with Martha Stewart’s Blooming Vegetable Quiche. We’re not kidding, the finished brunch dish is a work of art, but would you expect anything less from Martha?
Delish comes through as always with 20 make-ahead Easter recipes, including one for Hot Cross Buns complete with video tutorial for mixing – from scratch – the yummy, yeasty, cinnamon and nutmeg pan of pure deliciousness.
Desserts that Delight
Add a sweet note to your brunch with pretty and tasty paper-thin crepes, filled with berries and honey-laced vanilla yogurt.
This Coconut Custard Pie from Food and Wine is simple (relatively) and scrumptious-looking. Made with buttermilk, six eggs, and sweetened coconut, you’ll want some coconut or vanilla ice cream to scoop on top once you pull it from the oven!
Or mix up Midwest Living’s Blueberry-Peach Gratin for a brunch dessert, taking honeyed Greek yogurt to top broiled fruit over crushed gingersnaps.
For an easy indulgence, transform a roll of refrigerator cookie dough into a big Easter Bunny face – no cutter needed – or these funny little Bunny Bums that kids will love. And don’t forget the icing!
Reservations Required
Too busy to bake and broil? The Ridge at Castle Pines North (part of the Troon Golf Course campus) is serving rack of lamb, custom omelets, grilled veggies, whipped potatoes and assorted other meats, fruits, salads and desserts. Tickets are $15-$35 (children under 5 are free) and the 9:00 a.m. and 1 p.m. serving times are still open. Located at 1414 Castle Pines Parkway, you can reserve your space here.
