Cool and Yummy Summer Treats
With outside air temps hitting 90-plus degrees, the most refreshing creature comforts are cold summer treats to keep you cool on hot sultry days. Here are a dozen no-bake, frozen, and icy indulgences to help you beat the heat!
No-Bake Desserts
Raise your hand if you like peanut butter? Yeah? Then you’ll want to try this recipe from Real House Moms for no-bake Peanut Butter Ice Box Cake uses WHOLE graham crackers to layer with a smooth and creamy (and very high-calorie!) filling of cream cheese, whipped cream, peanut butter and powdered sugar. You might need a nap after a slice of this cake!
And for a dessert with spreadable peanuts: Peanut Butter Pie from Pure Wow. The no-bake crust is made with graham crackers and butter and the filling is basically peanut butter and heavy cream – frozen of course for a few hours in the freezer. And if you need a little chocolate to make your life complete, drizzle away.
If peanut butter isn’t your favorite, check out these other recipes for everything from Frozen Lemonade Pie from The Spruce Eats and Berry Tiramisu from Pure Wow to Cookies and Cream Meltaways from Cathy at Lemon Tree Dwelling.
Frozen Popsicles
Blogger Sue from A View From Great Island, likes stripes. And she found a way to put them into popsicles with whole fruit with kiwis, strawberries, blueberries, watermelon and pineapples. It’s a fruit salad on a stick!
Limes are the forgotten citrus, but they’re made for so much more than slicing into a cold bottle of beer! Stephanie at Girl Versus Dough shares her Lime Creamsicle recipe that looks as refreshing as it is easy to make.
If you’re in the mood for ice cream and prefer making your own combo-creation, visit Jim and Charlotte Dixon’s Cold Stone Creamery on Metzler Dr. in Castle Rock. They’ll give you sample tastes and are good friends of the master-planned community of Crystal Valley!
Frozen Drinks from the Tipsy Bartender
For an adult beverage that’ll keep you cool we consulted the Tipsy Bartender, who excels in frozen cocktails and, while we haven’t heard of 90 percent of these, some of them do look good enough to eat.
What’s your pleasure (or is it poison?), a Froze made with rosé ice cubes crushed to a sippy, strawberry slurry or a Blue Raspberry Jolly Rancher Slush? And while many of the Tipsy Bartender’s concoctions involve fruity flavors, you’ll also find a Banana Froster, The Beast (made with chocolate and whipped cream) and the Chunky Monkey made with crème de banana, crème de cacao and cream of coconut.
