It’s easy to get into a breakfast rut, and picky eaters can keep you there! We purposely collected a variety of ideas to keep you from dreading morning meals. Most are quick and easy, all are super tasty and lots are kid-tested, too!
Breakfast Quesadilla
Taste of Home has an easy breakfast quesadilla recipe that kids will LOVE and uses healthy alternatives like turkey bacon, wheat tortillas and light sour cream. The total prep time is about 15 to 20 minutes, mostly just to get yourself organized and make the scrambled eggs. It’s one of the site’s “most shared recipes ever.”
Night-Before Smoothie
Jaime, who blogs on Babble, makes smoothies for breakfast because they’re easier on her finicky belly, and her daughter likes getting in on the act with mama’s Dazzleberry-Banana and Peaches ‘n’ Cream smoothies. PB&J Stuffed Pancakes
Peanut butter powder is the secret to the intense nutty flavor (minus the fat) in these jam-stuffed pancakes. My Recipes uses a batter made with low-fat buttermilk, rolled oats and white whole-wheat flour and adding strawberry jam. These, too, can be placed in the freezer and will keep for up to six months.
Eggs and Bacon Pizza
Bacon and eggs take on an Italian twist when these two breakfast staples meet some pizza dough and parmesan cheese. Another mouth-watering recipe from MyRecipes.com.
French Toast Bowls
Why eat fruit by itself when you can have French toast with berries – in a bowl?! This Woman’s Day delight might be best for a weekend breakfast, because it’s not the quickest to pull together, but it is delicious. Because it’s baked and hot from the oven, you need to add in the 35 minutes of cooking time to the total prep.
Scrambled Eggs in a Jar
Now this is one grab-and-go breakfast for a hectic morning on the run! Part of it is put together the night before (combine spinach, bacon and Boursin cheese) so all you do in the morning is add beaten eggs, milk and seasoning. Shake it good and microwave for about 60 seconds for a yummy, eggy breakfast. Doesn’t everything just taste better in a mason jar? Toaster Pastries
We love a good Pop-Tart®. But when Smitten Kitchen decided to make her own homemade toaster pastries with naturally good pie crust, it sounded good to us! She suggests a variety of fillings: cinnamon, jam, chocolate chips and Nutella®, or some alternate savory combinations like pesto, cheeses, ground nuts and/or olives. Pop them into the freezer for now and then when you’re ready, thaw and pop in the oven for 30 minutes to bake them fresh.
