Three Ingredient Cookies
Blogger Arman Liew of Big Man’s World posted his three-ingredient breakfast cookies a couple of months ago that contain no flour, no eggs and no sugar! His gluten-free vegan breakfast cookie recipe uses rolled oats, peanut butter and chocolate chips. He likes bananas so he tosses one in the mix, too, but you don’t have to. Arman says quinoa flakes or buckwheat flakes will work, and if you don’t like peanut butter, use almond butter or even smooth tahini.
Gemma, the Irish baker who posts videos on YouTube under Gemma’s Bigger Bolder Baking, is a cookie maestro. Her three-ingredient cookies are the most popular cookies she makes. For her Shortbread Cookies creaming the butter, with sugar and flour takes 10 minutes, baking 18, so you can easily be dunking these little buttery beauties in milk or coffee in about a half an hour.
Gemma’s three ingredient Coconut Cookies use either unsweetened or sweetened shredded coconut and are gluten free. They look like macaroons and are just three ingredients – shredded coconut, sugar and coconut milk which binds the cookies together.
